The Aztec Superfood Protein-Packed Quinoa Salad

Quinoa Is for Salads too!  

This salad mixture scores good on fat, protein, and vegetables. Be sure to try it with your family!

Prepare 1/2C of cooked quinoa.

To the cooked quinoa add 1 15-oz can of drained garbanzo beans (for extra credit properly soak and rinse dried garbanzos), 1/4C chopped sweet onion, 1/2C chopped broccoli, and 1 or 2 cloves minced garlic.

Dressing:

In a separate bowl, blend 3T Extra Virgin Olive Oil, 1T lemon juice, 2t mustard (of choice), 1t tarragon, Himalayan Crystal Salt or Celtic Sea Salt and freshly ground black pepper to taste.

Gently stir dressing into salad ingredients. Chill for 1 hour before serving.
