Fresh Vegetable Soup

Serves: 4
Vegetables such as zucchini, tomatoes, carrots and onions aid the red beans in not only flavor, but color as well.
  • 4 cups boiling water
  • 4 teaspoons chicken or vegetable soup base
  • ½ teaspoon basil leaves
  • ⅛ teaspoon pepper
  • 1 clove garlic, minced
  • ½ cup onion, diced
  • 1 cup carrots, grated
  • 2 cups zucchini, grated
  • 1 cup tomato, chopped
  • 2 teaspoons parsley, chopped
  • 3 cups cooked red beans
  1. In a large saucepan, combine all ingredients except the beans. Bring to a boil, reduce heat and simmer, covered for 15 minutes.
  2. Blend half of the soup mixture. Add beans and cook an additional 5 minutes.
  3. * For variety, substitute tomato juice (or V-8) or water and add only 1 teaspoon chicken or vegetable soup base.
