1/2 C each coconut and another non-gluten flour (brown rice, buckwheat, garbanzo, or almond)
1/4 C cocoa powder
1/2t each baking soda and Himalayan Crystal Salt
3T coconut oil
1/2 C xylitol
2 large eggs
1/2 C chopped walnuts
Preheat oven to 350 degrees. Butter and flour a baking sheet. In a bowl, whisk together the flours, cocoa powder, baking soda, and salt.
In another bowl, beat together the eggs, coconut oil, and xylitol until the mixture is light and frothy. Combine with the dry ingredients and the chopped walnuts to make a stiff dough.
With moistened hands, form dough into a flattened log about 3 inches wide.
Bake for 30 minutes or until slightly firm to the touch. Cool slightly and then cut
diagonally into 3/4-inch slices. Place slices on baking sheet and return to oven for 10 minutes. Cool and store in an airtight container.
