Applesauce-Pumpkin Muffins

What a great combination of flavors in these healthy muffins!
Ingredients
  • ½ cup unsweetened applesauce
  • ½ cup canned pumpkin
  • 2 large egg whites
  • 1 large egg yolk
  • 2 tablespoons plus 1 teaspoon olive oil
  • ½ cup unsweetened almond milk (or milk of your choice)
  • ¼ cup maple syrup
  • 1 cup rolled oats
  • 1 tablespoon baking powder
  • ⅓ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon pumpkin pie spice
  • ½ cup flour of your choice (quinoa, spelt, etc.)
  • ¼ cup garbanzo bean flour
  • ½ cup raisins (optional)
Instructions
  1. Preheat oven to 3/75 degrees. Mix wet ingredients and dry ingredients separately and then add together.
  2. Grease or add paper to muffin tins. Fill ¾ way and bake 15-20 minutes. Makes about 1 dozen regular muffins.
